Tiramisu Mandarin


Ingredients

Ingredients for the mandarin curd :

75ml mandarin juice
60g light sugar
15 ml Morand Mandarin Syrup
Zest of 2 mandarins (organic is best)
2 eggs
80g butter

Ingredients for the tiramisu cream :

375g mascarpone
3 eggs
75g caster sugar
Zest of 2 mandarins (organic is better)

Ingredients for the biscuits :

12 Madeleines or sponge biscuits, depending on what you have in the cupboard
80ml Morand Mandarin Syrup


Preparation



Steps

  1. For the mandarin curd:

    Combine all ingredients (except butter) in a saucepan. Heat over low heat until boiling, stirring constantly. Remove from heat, add butter and strain to remove lumps. Set aside.

    For the tiramisu cream:

    Break the eggs, separating the whites from the yolks. In a bowl, whisk the yolks with the sugar until the mixture turns white. Beat the egg whites until stiff. Add the mascarpone (or 1/2 ricotta + 1/2 double cream, if not available) to the sugar/yolk mixture. Add the mandarin orange peel, then gently fold in the whites. Set aside.

  2. For the biscuit:

    Soak each madeleine/butter biscuit or other biscuit well in the Morand mandarin syrup.
    Then arrange a layer of biscuit in your glasses, a layer of mascarpone cream and finish with the mandarin curd.

    Set aside in the fridge overnight. Enjoy!
